Drinks based on fruit vinegar are a sophisticated and surprising Japanese tradition that's coming back in a big way at modern Tokyo bars. Here's an authentic taste of Japan that's sure to delight your guests, with or without alcohol.

THE NINTH ATTACHMENT

Sweet,  sour, and sinful, with a spicy ginger kick—you'll have a hard time giving this one up!

For one drink (scroll down for a pitcher):

2 T. (30ml) apple cider vinegar

2 T. (30ml) apple juice
1 T. (15 ml) ginger simple syrup (scroll down for quick recipe or buy readymade)
4 T. (60 ml) water
1/2 shot vodka (or sho-chu)*
​Fresh mint, for garnish

Stir together and serve over ice, with a sprig of mint.

* You can make these stronger, but I mix them weak because they go down so easy, everyone always comes back for more!

Alcohol free
For one drink (scroll down for a pitcher):

2 T. (30ml) apple cider vinegar

2 T. (30ml) apple juice
1 T. (15 ml) ginger simple syrup (scroll down for quick recipe or buy readymade)

4 T. sparkling water
​Fresh mint, for garnish

Stir together and serve over ice, with a sprig of mint.

FRESH GINGER SIMPLE SYRUP

Makes one cup (can be multiplied for more)

1 c. (235 ml) water
1 c. (128 g) sugar
Fresh ginger (a piece about as long as your hand), peeled and sliced thin

Stir together sugar and water over medium heat in a small saucepan. When sugar is dissolved, add sliced ginger. Bring to a gentle boil. Cover and turn down heat until it's just simmering. Simmer for fifteen minutes. Let cool, then strain out ginger pieces.


PARTY-SIZE RECIPE

Makes 10 cups

2 c. (470ml) apple cider vinegar

2 c. (470ml) apple juice
1 c. (235 ml) ginger simple syrup (scroll down for quick recipe or buy readymade)
4 c. (940 ml) still or sparkling water
1 c. (235 ml) vodka or sho-chu (optional)
​Fresh mint, for garnish
